  1. Good morning!!! Super congrats on the new Christmas releases!!! They both sound so fun!

    Hope they are bestsellers for you both and hope your holidays are filled with love, friends, family and good times!

    Here's my cookie recipe - it's from this great cookbook I call my cheater cookbook because the recipes are so easy!!

    1 (18 oz) package German chocolate cake mix with pudding
    1 egg, slightly beaten
    1/2 cup (1 stick) butter
    1 cup crispy rice cereal (rice crispies)

    Combine cake mix, egg and butter. Add cereal and stir until they blend. Shape dough into 1 inch balls. Place on lightly sprayed cookie sheet. Dip fork in flour and flatten cookies in crisscross pattern. Bake at 350 for 10 to 12 minutes. Cool. Makes about 30

    Here is my cookie recipe.I found it last year and everyone loved them.

    Andes Chocolate Mint Cookies

    3/4 cup butter
    1 1/2 cups of brown sugar
    2 tbsp. water
    12 oz. bag of chocolate chips
    2 eggs
    2 3/4 cups of flour
    1/2 tsp. salt
    1 1/4 tsp. baking soda
    ---------

    **for top of cookies
    Andes chocolate

    ---------

    Melt together butter,brown sugar and water.Add chocolate chips and stir until melted.
    Let stand 10 min. to cool
    Add remaining ingredients(eggs,flour,salt baking soda). Mix together.
    Chill dough at least 1 hour.
    Roll into balls and place on lightly greased cookie sheet.Bake at 350 degrees for 8 to 9 minutes.Remove from oven and place 1 or 2 Andes mint on top of each cookie.Put back in oven for only about 10 seconds. Swirl top of cookie with a spoon.

    **We don't get Andes chips up here in Canada,but we get the thins.So I just broke them in half and used those for the top of the cookie.

  3. Sesame Coconut Cookies
    1 pound (4 sticks) unsalted butter, room temperature
    1 1/2 cups sugar
    3 cups all-purpose flour
    2 cups shredded sweetened coconut
    1 cup sesame seeds
    1/2 cup finely chopped pecans
    (I omit the pecan due to nut allergies)
    1. Preheat oven to 300 degrees. Line baking sheets with Silpats (French nonstick baking mats).
    2. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 2 minutes. Add flour a half cup at a time, mixing on low speed until well combined.
    3. Remove bowl from mixer; with a wooden spoon or your hands, stir in coconut, sesame seeds, and pecans. Divide dough into thirds. Roll into logs about 1 1/2 inches in diameter. Wrap each log in plastic, and refrigerate until very firm, about 2 hours.
    4. Using a sharp knife, cut logs into 1/4-inch-thick slices. Transfer to prepared baking sheets, about 1 1/2 inches apart. Bake until edges are golden, 20 to 30 minutes. Transfer sheets to a wire rack to cool. Cool for 5 minutes on baking sheets before transferring cookies to wire racks to cool completely. (from Marthastewart.com)

    These cookies ALWAYS get devoured. They sound strange but they taste amazing! They even appeal to people who don't normally like desserts!

    While you’re tracking Santa you can bake and munch on delicious Christmas cookies. Oh, and *wink* there are no calories, of course!

    Ingredients
    2 3/4 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    1 cup butter, softened
    1 1/2 cups white sugar
    1 egg
    1 teaspoon vanilla extract

    Directions
    1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
    2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
    3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

    As I grow older (and more mature) I think more of what I would really like to have Santa bring me All Year Round.
    My wishes for this year are not in any order of importance, but equally weighed. You can see my past professional life reflected in my interests here as well as my current professional life.
    Hope all of you writers out there note #1 and write to your Congressman and Senators to pass this bill!

    1. May the U.S. Government please criminalize internet pirates! Now with this new bill currently in Congress, may these people see the wisdom of protecting Americans, like writers and musicians and filmmakers and so on, who work every day at creating art others can and should buy. Legally.

    2. May those American elected officials of the two main political parties in this country earn their salaries by negotiating (not a dirty word) to solve our challenges. And they better move like the wind, too!

    3. May solid journalism survive the onslaught of those who attack it. And may independent newspapers have enough subscribers to continue to do investigative, impartial reporting.

    4. May I please devote one more day each week this year to pumping iron.

    5. May people please turn off their cell phones in doctors’ offices, et al!

    6. May my husband and I find a new little doggie to love and cherish.

    7. May my writer friends flourish in their ideas and production. May my readers enjoy everything we produce!

    8. May Santa bring me a(nother) Christmas Day filled with the laughter of those I love, the charm of those I cherish and a fond remembrance of those no longer here to celebrate a safe, warm, serene holiday.

  6. CHOCOLATE SAUCE
    For
    Ice Cream, brownies and decadence!
    A great gift, too!

    Prep time: 10 minutes to unwrap the caramels!
    Other? 15 minutes

    Ingredients:

    1 12 oz. bag of chocolate chips (try the dark chocolate, too! Yummy!)
    1 12 oz. bag of caramels
    1 sticks butter (1/2 cup)
    1 can evaporated milk

    Mix in a bowl suitable for microwaving

    Heat on high at 2 minutes or less per time*. For a total of 10-12 minutes. (Do not heat all at once, it will boil over.)

    *Stir at each interval to mix the chips and caramel.

    Remove from micro and stir to ensure all caramels are melted and butter is thoroughly integrated.

    Cool.

    Refrigerate in mason jar or other ceramic. (If sauce is still hot when you transfer to a jar, be certain to put a long metal spoon in the jar so it does not crack form the heat!)

    A great gift everyone loves!

  8. Here is a recipe for peanut butter cookies. I found this years ago on the Crisco site. INGREDIENTS:

    3/4 cup Creamy Peanut Butter

    1/2 stick Baking Sticks All-Vegetable Shortening
    OR 1/2 cup All-Vegetable Shortening

    1 1/4 cups firmly packed brown sugar

    3 tablespoons milk

    1 tablespoon vanilla extract

    1 large egg

    1 3/4 cups All Purpose Flour

    3/4 teaspoon baking soda

    3/4 teaspoon salt

    PREPARATION DIRECTIONS:

    1.
    HEAT oven to 375°F. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.

    2.
    COMBINE flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended. Drop by rounded tablespoonfuls 2-inches apart onto greased baking sheet. Flatten slightly in a crisscross pattern with tines of fork.

    3.
    BAKE one baking sheet at a time 7 to 8 minutes, or until set and just beginning to brown. Cool 2 minutes on baking sheet. Remove cookies to cooling racks to cool completely.

    Ingredients
    1/2 cup butter, softened
    1/2 cup shortening
    1 1/2 cups white sugar
    2 eggs
    2 teaspoons vanilla extract
    2 3/4 cups all-purpose flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1/4 teaspoon salt
    2 tablespoons white sugar
    2 teaspoons ground cinnamon




    Directions
    1. Preheat oven to 400 degrees F (200 degrees C).
    2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar, soda and salt. Shape dough by rounded spoonfuls into balls.
    3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
    4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

  10. These are one of my favorite cookies and I always include them on my Christmas cookie platters.
    Lemon Shortbread

    Recipe By: hayly
    Serving Size: 48

    -= Ingredients =-
    2 cups flour
    1 cup cornstarch
    1 cup powdered sugar
    1/4 cup Lemon zest
    1 1/2 cups butter; softened
    colored sugars; optional

    -= Instructions =-
    Combine flour, corn starch, powdered sugar and lemon rind in a large bowl. With a large spoon or a mixer, blend in butter until a soft, smooth dough forms. Roll dough to 1/4" thickness. Cut into shapes with cookie cutters. Place on ungreased cookie sheets. Sprinkle with colored sugar. Bake at 300F for 15-20 minutes or until edges are lightly browned. Remove from sheet; cool completely. Makes about 4 dozen 2" cookies.

  11. Congrats on your releases! They sound great! Hope your weekend is going well! Any plans for the holidays?

    My favorite cookies are:

    No Bake Cookies
    Ingredients:
    1 1/2 cups of milk
    2 cups sugar
    1/3 cup coco
    1/3 cup butter
    3 cups oatmeal
    1 1/2 cups peanut butter
    1 tbles vanilla extract

    In a large pot, bring to a boil the milk, sugar, coco and butter. Once everything is mixed and the pan is boiling, pull off heat and put in peanut butter and vanilla. Once the peanut butter is melted, put in oatmeal. Stir it, make sure everything is combined and once done, you drop spoonfuls of cookie on waxpaper. Or, if your like me, just pour the cooks into a cake pan, stick in fridge and let cool. Once cookies are cool, cut and serve! Hope this makes sense. lol

    soft gingerbread cookies


    Ingredients
    • 2 1/4 cups all-purpose flour
    • 2 teaspoons ground ginger
    • 1 teaspoon baking soda
    • 3/4 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/4 teaspoon salt
    • 3/4 cup margarine, softened
    • 1 cup light brown sugar packed
    • 1 egg
    • 1 tablespoon water
    • 1/4 cup light molasses
    • 2 tablespoons white sugar

    Directions
    1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
    2. In a large bowl, cream together the margarine and 1 cup light brown sugar until light and fluffy. Beat in the egg, then stir in the water and light molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
    3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container

    Here's my go-to this time of year:

    Ingredients:

    1/2 pound (two sticks) butter
    1/4 cup brown sugar
    1/4 cup granulated white sugar
    1/2 box (about) graham crackers (not crumbs)
    2 cups semi-sweet chocolate chips
    1 cup chopped macadamia nuts
    Preparation:

    Preheat oven to 350 degrees F. Line a 10 x 15-inch jelly-roll pan with non-stick foil. Arrange whole graham crackers to fit the bottom of the pan in a single layer, breaking up the last few to fit the space.

    Melt butter in a medium saucepan over medium heat. Add brown sugar and white sugar. Stir to combine. Bring mixture to a boil. Reduce heat and let the mixture gently bubble for 4 minutes. Remove from heat.

    Carefully pour sugar/butter mixture evenly over the graham cracker layer. Spread to cover. Bake for 10 minutes.

    When done, remove from oven and let rest until bubbling subsides. Sprinkle chocolate chips evenly over the top. Wait about 2 minutes for chocolate to melt, then use a spatula to gently spread chocolate chips into an even layer on top of the toffee graham crackers. Sprinkle with the chopped macadamia nuts, pressing down gently into the chocolate.

    Cool to room temperature, then refrigerate for 2 hours. Peel foil from chilled bark. Break into 2-inch irregular pieces.

    Refrigerate any leftovers.

    My favorite is a layer cookie:

    1 cube butter
    1 cup graham cracker crumbs
    1 cup chocolate chips
    1 cup butterscotch chips
    1 cup coconut
    1 cup chopped walnuts

    layer in a 9 x13 and pour 1 can of condensed milk over top

    bake 350 for about 25 minutes until top is bubbling

  18. ~ OATMEAL RAISIN SPICE COOKIES IN A JAR ~

    3/4 cup packed brown sugar
    1/2 cup white sugar
    3/4 cup raisins
    2 cups rolled oats
    1 cup all-purpose flour
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1 teaspoon baking soda
    1/2 teaspoon salt
    Mix together flour, ground cinnamon, ground nutmeg, baking soda and salt. Set aside. Layer ingredients in order given in a 1 quart "wide mouth" canning jar. It will be a tight fit, make sure you firmly pack down each layer in place before adding the flour mixture.

    Instructions to attach to jar:

    Oatmeal Raisin Spice Cookies
    1. Empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly blend mix.
    2. Add: 3/4 cup butter or margarine softened at room temp. Stir in one egg, slightly beaten. Add in 1 teaspoon of vanilla. 3. Mix until completely blended. You may need to finish mixing with your hands. 4. Shape into balls the size of walnuts. Place on a parchment-lined cookie sheet 2 inches apart. DO NOT USE WAXED PAPER. 5. Bake at 350 degrees F (175 degrees C) for 11 to 13 minutes until edges are lightly browned. Cool 5 minutes on baking sheet. Remove cookies to baking racks to finish cooling. Makes 3 dozen cookies.

    GINGERBREAD BEARS (OR WHATEVER YOU FANCY)

    Ingredients

    1 cup butter
    2/3 cup packed brown sugar
    2/3 cup corn syrup
    1 egg, beaten
    1 1/2 teaspoons vanilla extract
    4 cups all-purpose flour
    3/4 teaspoon baking soda
    2 teaspoons ground cinnamon
    1 teaspoon ground ginger
    3/4 teaspoon ground cloves

    Directions

    In a medium saucepan, Stir together the margarine, brown sugar, and molasses over medium heat until dissolved. Pour into a large mixing bowl, and let cool for 5 minutes. Stir the egg and vanilla into the melted mixture until smooth. Sift together the flour, baking soda, cinnamon, ginger, and cloves; stir into the wet mixture. Cover and chill dough for a few hours or overnight.
    Preheat oven to 325 degrees F ( 165 degrees C ).
    On a lightly floured surface, roll out dough to 1/4 inch thickness. Cut into bear shapes with a cookie cutter, and place onto an unprepared cookie sheet. Bake for 10 to 15 minutes in the preheated oven, cookies should be firm.

  21. My Mom's Sugar Cookie Recipe

    1 cup margarine
    1 1/2 cup powdered sugar
    1 egg
    1 tsp vanilla
    2 1/2 cup flour
    1 tsp baking soda
    1 tsp cream of tartar

    Mix margarine, powdered sugar, egg & vanilla until smooth. Mix flour, baking soda & cream of tartar. Slowly mix the dry ingredients into the wet ingreients. Mix well and chill at least one hour. Roll out and cut into shapes. Bake 350 degrees for 8-10 minutes.

    Frosting recipe

    1/3 cup margarine
    3 cups Powdered sugar
    1 tsp vanilla
    1 1/2 Tbl milk

    Mix until smooth. Tint with food coloring.

    Enjoy!

  22. The following is something that I have seen described as a candy and as a cookie. I can say that they are fast and disappear rather quickly.

    Peanut Butter Cornflake Cookies:

    1 c granulated sugar
    1 c corn syrup
    1 - 1 1/2 c peanut butter
    6 c corn flakes

    Line a 9x13 inch paking pan with aluminum foil and butter it. Melt sugar and corn syrup over medium heat and wait for it to boil. Mix in the peanut butter till smooth. Put corn flakes into a large mixing bowl and pour the peanut butter mixture over the cereal. Mix it all together quickly and thoroughly. Pour into the prepared pan and pat down firmly. Cut into small bars or large candies. These are rich and I first had them at a college cafeteria which was serving them as a dessert. Can dress them up by drizzling melted chocolate on the individual pieces.
